Ingredients:
- 1 cup/ 250g mashed ripe banana
- 2 cups/ 200g grated zucchini (squeeze out excess moisture)
- 3 large eggs or 2 extra large eggs
- 1 teaspoon vanilla extract or ground cinnamon
- 2 cups almond flour
- ¼ cup chia seeds
- ¼ cup Gut Food
- 2 teaspoons baking powder
- ½ to 1 cup no added sugar dark chocolate chips
Instructions:
- Preheat oven to 180C and line a loaf pan with baking paper.
- In a large bowl, mix together mashed banana, zucchini, eggs and vanilla until smooth.
- Mix in the almond flour, Gut Food, choc chips and baking powder until well combined.
- Pour into the loaf pan. Decorate with extra sliced bananas and chocolate chips if you like.
- Place in the oven and bake in oven for 40-50 minutes (Stick a toothpick in and when it comes out clean – it is ready!)
- Rest the bread for at 15 minutes then slice and enjoy!
