GF Chia-Almond- Zucchini Banana Bread

Ingredients: 

  • 1 cup/ 250g mashed ripe banana 
  •  2 cups/ 200g grated zucchini (squeeze out excess moisture) 
  •  3 large eggs or 2 extra large eggs
  • 1 teaspoon vanilla extract or ground cinnamon
  • 2 cups almond flour
  • ¼ cup chia seeds
  • ¼ cup Gut Food
  • 2 teaspoons baking powder
  • ½ to 1 cup no added sugar dark chocolate chips

Instructions: 

  • Preheat oven to 180C and line a loaf pan with baking paper.
  • In a large bowl, mix together mashed banana, zucchini, eggs and vanilla until smooth.
  • Mix in the almond flour, Gut Food, choc chips and baking powder until well combined.
  • Pour into the loaf pan. Decorate with extra sliced bananas and chocolate chips if you like. 
  • Place in the oven and bake in oven for 40-50 minutes (Stick a toothpick in and when it comes out clean – it is ready!)
  • Rest the bread for at 15 minutes then slice and enjoy!
