Featuring Gut Food (a prebiotic-rich blend), anti-inflammatory spices, and hidden veggies, these muffins make a wonderful grab-and-go breakfast or nourishing snack.
Ingredients
- ½ cup almond flour
- ⅔ cup spelt or buckwheat flour
- 1 tsp ground cinnamon
- ½ tsp salt
- ½ tsp bicarb soda (baking soda)
- ⅓ cup low sugar cranberries
- ½ cup chopped cashews
- 3 heaped tsp Gut Food
- 50 ml olive oil
- 50 ml maple syrup
- 2 eggs
- 60 ml Coco Quench (or other plant-based milk)
- ½ grated zucchini
Instructions
Preheat your oven to 180°C (350°F) and line or grease a muffin tin.
In a large bowl, combine almond flour, spelt or buckwheat flour, bicarb soda, cinnamon, salt, cranberries, cashews, and Gut Food.
In a separate bowl, whisk together olive oil, maple syrup, eggs, plant-based milk, and grated zucchini.
Mix the wet ingredients into the dry ingredients until just combined. Do not overmix.
Spoon the batter into the muffin tin, filling each cup about ¾ full.
Bake for 20–25 minutes or until golden and a toothpick inserted into the centre comes out clean.
Cool slightly before enjoying.
