Ingredients

  • ½ cup almond flour
  • ⅔ cup spelt or buckwheat flour
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ½ tsp bicarb soda (baking soda)
  • ⅓ cup low sugar cranberries
  • ½ cup chopped cashews
  • 3 heaped tsp Gut Food
  • 50 ml olive oil
  • 50 ml maple syrup
  • 2 eggs
  • 60 ml Coco Quench (or other plant-based milk)
  • ½ grated zucchini

Instructions

Preheat your oven to 180°C (350°F) and line or grease a muffin tin.

In a large bowl, combine almond flour, spelt or buckwheat flour, bicarb soda, cinnamon, salt, cranberries, cashews, and Gut Food.

In a separate bowl, whisk together olive oil, maple syrup, eggs, plant-based milk, and grated zucchini.

Mix the wet ingredients into the dry ingredients until just combined. Do not overmix.

Spoon the batter into the muffin tin, filling each cup about ¾ full.

Bake for 20–25 minutes or until golden and a toothpick inserted into the centre comes out clean.

Cool slightly before enjoying.
