Ingredients
For the crust:
1 cup pitted dates
1 cup pecans
1 tbsp coconut oil
1 tsp vanilla extract
1/4 tsp sea salt (half for crust)
For the filling:
1 large avocado, pitted
Juice & zest of 1 medium lime
2 tbsp raw honey (or maple syrup for vegan option)
1/4 tsp sea salt
To top:
2 tbsp unsweetened shredded coconut
Directions
Make the crust:
In a food processor, combine the dates, pecans, coconut oil, vanilla, and half the sea salt. Blend on high until the mixture is sticky and holds together when pressed.
Assemble the base:
Divide the crust mixture into 4 small jars or ramekins. Press it down firmly to create the base layer. Set aside.
Make the filling:
Wipe out the food processor. Add the avocado, lime juice, lime zest, honey, and remaining sea salt. Blend until smooth, creamy, and vibrant green.
Finish and serve:
Spoon the filling over the crust in each jar. Sprinkle with shredded coconut. Serve immediately or chill for up to 24 hours.
