You are going to loooovvve this indulgent chocolatey, earthy & gut loving treat! Trust us when we say mouth watering!

INGREDIENTS
- 400g pre cooked beetroot
- 25ml extra virgin olive oil
- 3 tablespoons of Nourished Blends Gut Food
- 5-6 medjool dates
- 3 eggs
- 1 teaspoon vanilla extract
- 120g 70% dark chocolate
- 100g pre cooked quinoa
- 100g almond flour
- 1/4 teaspoon baking soda
- opt - 1/2 cup chopped almonds for serving
METHOD
- Preheat the oven to 200C and line a rectangle or square baking tin.
- In a food processor or blender, mix together the beetroot, extra virgin olive oil, dates, eggs and vanilla extract.
- Melt 3/4 of the dark chocolate. Then pour it into the ingredients in the food processor. Blend until completely smooth.
- Add the quinoa, Nourished Blends Gut Foods, almond flour and baking soda. Blend again until the batter starts to thicken. Then transfer the mixture to the lined baking dish.
- Chop the remaining dark chocolate into small pieces & sprinkle over the mixture in the dish.
- Bake for 25-30 minutes, until a knife comes out clean. Let them cool completely before removing them from the tray and slicing into squares.
- Serve with optional crushed almonds and a touch of melted dark chocolate.
