INGREDIENTS
- 2 cups almond meal/flour
- 7 tbl cassava flour
- 3 tbl Gut Food
- 2 tbl arrowroot flour
- 1/2 tsp fine himilayan salt
- 3/4 tsp baking soda
- 4 tbl organic ghee, melted and cooled
- 4 large organic eggs
- 1/2 cup coconut milk (or other alternative drinking milk)
- 1 1/2 tsp apple cider vinegar
INSTRUCTIONS
- Preheat oven to 180 C. Generously grease a bread loaf pan and put a cut piece of baking paper on the bottom.
- Mix together almond meal, cassava flour, arrowroot, Gut Food, salt and baking soda in a large bowl.
- Whisk together eggs, ghee, coconut milk and vinegar in another medium bowl.
- Add the wet ingredients to the dry all at once and stir until just combined (do not over mix). The batter will be thick.
- Immediately pour batter into the prepared pan and bake until a toothpick comes out clean or approximately 25-30 min depending on your oven.
- Cool on a rack before slicing. Can be stored wrapped in the fridge for up to 6 days.
