Sweet Potato Brownies

Sweet potato Brownies are a delightful twist on a classic treat, offering a healthier alternative without sacrificing taste. These brownies are not only delicious but also packed with nutrients that your body and your GUT will love. 

  • 1 medium sweet potato, grated
  • 1/2 c + 2 tbl coconut oil, melted
  • 1/3 c maple syrup 
  • 2 tbl vanilla extract 
  • 1/2 c raw cacao powder
  • 1 tsp baking powder
  • 1 tsp baking soda 
  • 2 tbl buckwheat flour
  • 2 tbl Gut Food
  • 1/3 c dark chocolate chips 
Preheat oven to 160 degrees C. Oil and line a cake tin. In a bowl combine sweet potato, coconut oil, maple syrup and vanilla. 
Add in cacao, buckwheat flour, Gut Food, baking soda and baking powder. Stir to combine. Top with chocolate chips. 
Pour into tin and bake for 20-30min or until firm on the outside but soft and decadent on the inside!
