INGREDIENTS
- 1/2 cup almond meal
- 1 1/3 c cup buckwheat flour
- 1/3 cup Gut Food
- 1 tsp baking soda
- 1 1/2 tsp cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground nutmeg
- 1/4 ground cloves
- 1/2 tsp salt
- 2 eggs
- 3/4 c coconut sugar
- 1/2 c coconut oil
- 1 1/4 c pumpkin puree
- 1/4 c coconut or almond milk
INSTRUCTIONS
- Preheat oven to 190 C. Prepare a muffin tin with liners.
- In a large bowl whisk together flours, gut food, baking soda, cinnamon, ginger, nutmeg, cloves and salt.
- In a medium bowl whisk together eggs, sugar and oil. Then add in pumpkin and milk and mix.
- Pour wet mixture into dry and mix gently until just combined.
- Divide the batter amongst muffin cups.
- Bake for 15-22 min or until a toothpick comes out clean.
